Thai Fried Rice
INGREDIENTS
2 cups cooked rice
3 big garlic flakes (crushed and chopped)
1 large onion (diced)
½ cup cooked prawns
Spring onion (cut into 1-inch pieces)
1 egg
2 medium-sized tomatoes (sliced)
2 tbsp oil
½ tsp sugar fish sauce or salt to taste
METHOD
Heat the oil, add garlic and sauté for a few minutes. Then add the onion, tomatoes, half of the spring onions and prawns and sauté for two more minutes. Add sugar and fish sauce or salt. Now add the egg; don't scramble immediately, wait till it sets, then scramble and sauté. Add the rice; sauté and mix properly. Finally add the remaining spring onions and remove from fire. Note: Ingredients special to the Thai cuisine such as fish sauce, galangal (a plant of the ginger family), lime and kaffir leaves are easily available in all leading supermarkets.
